The Uncles duel over Potato Soup

Two of my uncles gave me their special potato soup
recipe. I am going to combine theirs and make
my own this week.
They would enjoy giving a thumbs down to the
other's potato soup. They loved to joke. When
anyone would get married, they would line up and
say do they get thumbs up or thumbs down.
They would always give a thumbs down and then laugh like it was the first time they had done that.
Here goes boys.....

Dales Potato Soup
8 servings
4 Tbls butter, 3 large onions
6 large potatoes, 3 cups milk
2 cans chicken broth, 1/4 cup chives
1 celery stalk (chopped), 1/2 tbl celery seed
1/4 tbl Thyme, 1 cup light cream, 2 tbl flour
Put butter, onions, potatoes (sliced), Milk, chicken broth, herbs and celery in pot.
Cook on low heat for 1 hour.
Stir briskly
Add 2 tbl butter and 2 tbl flour.
Again stir briskly..until bubbly.
Add cream and salt and pepper to taste.

Reg's homemade Potato Soup
4 servings
Reg would make homemade bread to go with his
soup.
6 Large Potatoes, possibly 8 potatoes
1/2 onion, 4 strips bacon, sliced in small pieces
1 small can of canned milk, 1 tbp salt
1 tbp pepper, parsley flakes, 2 tbp butter
2 cups milk.
Peel and cut potatoes into small pieces. Cover with water and boil until potatoes are soft but
still firm. Meantime fry bacon and onion. Bacon
should be crisp and onion golden brown.
Add enough milk to cover top of potatoes or until soupy and also 1 can of evaporated milk.
Could use cream. Keep potatoes simmering while adding ingredients.
Eat with plenty of crackers or homemade bread.
He did not say how long to simmer with bacon
added. I would try about 20-25 minutes extra.

Have fun experimenting with this great soup.
