Pancakes The Uncles Special treat

I have an uncle Fred who always cooks breakfast if we have a womens weekend.
Blueberry pancakes is his favorite!

This is the basic recipe.  Add your cup of fruit to it.
2 cups of Pancake Mix (buttermilk)
2 TBLS oil
2 eggs
1 cup of buttermilk
1 cup Blueberries (fresh or frozen thawed)
1/2 tsp cinnamon
Mix ingredients.  Cook on hot griddle.  Make as directed on pancake mix box.

He finishes this with  sausage links,  fried eggs, toast and bacon.  You can only have this
once a month.

He is gone now but his meals live on!

Swedish Pancakes
4 eggs,  1/2 cup milk
1/2 cup flour, 2 tbsps butter
1 dash salt,  1 dash sugar

Mix eggs, flour and milk.  Beat two minutes.  Put two tbsps of butter into
an iron skillet.  Pour mixture in the iron skillet.  Place in 400 degree
oven for 13 min.  Or watch until pancake puffs
up and turns golden brown on sides.

Serves 4

Add  Blueberry sauce... This is Glenda my cousins lite sauce
Frozen  Blueberries
Splenda
Cook frozen blueberries in sauce pan over medium heat until soft and juicy.
Add in sugar to taste
Note  Do not thaw frozen blueberries before cooking.
