2/3 cup sugar 1 3/4 cups Flour sifted
1/3 cup shortening, 1/4 tsp salt, 2 eggs
1/4 tsp baking soda 2 tsp baking powder
1 cup mashed bananas, 1/2 cups nuts optional
1/2 cup dates ( chopped) optional
Mix dry ingredients. Add beaten eggs and shortening
Beat mixture until fluffy. .
Add in ripe bananas that have been mashed up with a potato masher
and then measured
Mix lightly.
Add in nuts and dates if you desire
Double recipe for two loaves. Bake 50 minutes to 1 hr at 350'F
Spray pans with cooking spray ... Be sure to get the corners well
Bake 50 minutes to 1 hr at 350' F until brown and bounces back on touch.
Cool and wrap to store

Whole-wheat peanut butter-chocolate chip banana bread
Makes 1 8-inch loaf
1 cup whole-wheat flour, 1/2 cup all-purpose flour
1 tsp. baking soda, 1/4 tsp salt
4 ripe bananas, mashed (if frozen, thawed)
1/2 cup creamy peanut butter (I used Peanut Butter & Co.'s maple flavor)
1/2 cup sugar, 2 large eggs
2 tsp. vanilla extract
1/2 cup chocolate chips
1. Preheat oven to 350°F; mist an 8-by-4-inch loaf pan with cooking spray.
2. In a small bowl, stir together both flours, baking soda and salt. In a separate bowl, mash bananas with a large fork. Stir in peanut butter, sugar, eggs and vanilla with a wooden spoon until well combined. Add the dry ingredients and stir until just combined; do not overmix. Fold in the chocolate chips.
3. Spoon the batter into the loaf pan and bake for 1 hour, until a toothpick inserted in the center of the bread comes out clean. Let cool in pan on a wire rack for 10 minutes, then turn bread out of pan onto rack to cool completely.
